Brainard Colaco originally from Goa, but born and brought up in Mumbai, has a long history with the hotel industry.
Having enjoyed working in the hot kitchen. The passion for cakes and desserts developed much later, He don’t know when and where it started, but it started and there was no stopping.
After a stint of a year with French company Accor, he joined Impresario Entertainment who run the coffee chain Café Mocha as Head Executive Chef. In his eight year stint with Mocha he expanded the brand from 1 outlet to 22 outlets all over India. He was also the youngest Corporate Head Chef in India at that time.
Today, Brainard runs a boutique Cake shop Moga in Goa & is a Consultant to many Pastry related ventures.
